Tropical Brut IPA

Imagine aromas of tropical fruits like passionfruit, lychee, mango and pineapple in one refreshingly delicious beer—say hello to the Tropical Brut IPA.

This brew is fruity and dry like a sparkling champagne making it the perfect beer to enjoy when celebrating your most special celebrations.  The beer will make its debut just in time for summer so you’ll be able to enjoy the fruity bubbly brew ice-cold on a hot day!

Tasting Notes

The Tropical Brut IPA is a 6.5% hop champagne made using El Dorado, Calypso and Hallertau Blanc. The combination of the different hops and tropical aromas make the experience initially fruity. It then quickly transitions into a dry finish.

 

 

You can buy the Tropical Brut IPA directly from Frenchies Bistro & Brewery and select Bottle Shops from the 9th of December.

 

Lola’s Saison

Lola’s Saison is an extremely special beer as it is inspired by the daughter of a Frenchie!
Chef Thomas’ baby girl, Lola, who is as sweet and juicy as apricots can be, is the muse behind this refreshing brew.

The brew will be sold in cans but are also being aged in barrels for more complex flavours.

Tasting Notes

Lola’s Saison is made with fresh apricots and French yeast.
This yields a beer that while smelling like a punnet of fresh apricots tastes light, straight and dry on the tongue.

Caviar Dinner Series

Our Caviar dinner series seeks to celebrate different seasonal types of caviar and their respective wine and beer pairings.

Our dinner series will be held for three consecutive Fridays: 15, 22 & 29 November.

Caviar is roe that has been harvested from a fish and salted. Depending on the rarity of the fish, caviar can be one of the most expensive ingredients in the world. Chef Thomas sourced caviar from 3 different fishes : sturgeon, salmon and trout.

One of our featured caviars, first harvest salmon caviar, has been sourced from young salmon fishes that have not been milked before. The result is a softer grain with a more mineral-like taste. It is paired with meaty Black Russian tomatoes, fresh green peas and delicate veal sausage. The acidity of the tomatoes and sweetness of the green peas counter the assertive taste of the caviar while the veal sausage seamlessly ties all the elements together. The dish is also enhanced with a rich black sturgeon caviar butter.

Black sturgeon caviar, the food of kings is enchantingly salty and extremely prized. Its astringency is complemented well by the creamy butter and crisp toast. The result is a dish that is well-balanced but celebratory of the caviar.

Trout caviar is normally a lot milder in potency however, for the second course, smoked golden trout caviar is used which has slightly charred or meaty notes. This flavour profile shines beautifully in the face of slightly sour and sweet corn and sorrel ravioli and a nutty but buttery popcorn sauce.

Black sturgeon caviar comes from the Ossetra sturgeon. It is the second most expensive and valuable caviar in the world. Living up to its reputation, the caviar creates an explosion of sensations on the palate with extraordinary grace. It is paired with a buckwheat blini and crème fraîche, two delicate elements that let the beauty of the caviar shine with only the slightest of enhancements.

Frenchies Spring Lunch Special

Celebrate spring with our special lunch menu and receive a free beer with any main dish. Our main dishes start at $15 and are carefully created by our chef Thomas to feature ingredients at their prime.

Our lunch menu allows for the opportunity to experience French fine dining at an affordable price.
At Frenchies, we meticulously choose our ingredients to formulate dishes that are both gourmet and a pleasure to savour. Our chef Thomas regularly changes the menu as he uses produce and meats that are of the highest quality, market fresh and seasonal.

Therefore, we cannot guarantee the menu items in advance but, we have provided lunch examples. Our menu items will always be a mix of seafood and meat.

Frenchies Bistro and Brewery

Bistronomy is a French word. What does it means?

At Frenchies, we aim to bring the Parisian bistronomy culture to the Australian table – both on the plate and in the glass. Bistronomy is about creating great seasonal cuisine at an affordable price. It’s a mix of the word Bistro and the word Gastronomy (fine dining).

Executive Chef Thomas Cauquil is specialised in Charcuterie integrating fantastic patés and terrines to the menu. He works closely with a handful of local producers, farmers, fishermen and providers to use what is best in season.

Frenchies beers

We try to express what nature gives us, using all ingredients to the right measure. Our beers contain no additives, they are unpasteurised and have a life of their own.  They are all hand brewed on site by master brewer Vincent de Soyres.

Frenchies 2nd aniversary

Two years ago, we were painting, drilling, screwing, gluing, fixing and thinking a lot…
Today, we have become the first brewery to be featured in the Good Food guide and our beers have won many awards.

So it’s time to celebrate with all our friends and families who have supported us all the way

In fact, Vincent has crafted a very special beer, just for the occasion:  the Double Dry Hopped Imperial IPA.

On the night, Thomas will prepare some free nibbles (you know that nibbles by Thomas are not your ordinary nibbles, right?! think canapés, gougères, etc.) and a birthday cake to share with everybody (not ordinary either as it will be a proper French “piece montée”, what we call here a croque-en-bouche).

Double Dry Hopped Imperial IPA

It is dry hopped twice with 4 different hops that are all part of Frenchies brewing history. Comet was our first star hops from our original Comet Pale Ale with its intense grapefruit aromas. The German Hallertau Blanc hops was the spirit of our Old World IPA, the first IPA we brewed as we opened. Riwaka is our favourite hops since 2019. We use it in many different ways across all beers. And finally Mosaic, it’s our Gypsys favourite hops. We use it in almost every single beer that comes out of our brewhouse under different brands.

Father’s day at Frenchies

This year, for the first time, Thomas will be celebrating father’s day as a father. His little princess Lola was born 6 months ago and he is now  the happiest dad on earth. His favourite moment with his daughter is in the morning when she wakes up. “As soon as I hear her little noises, I go to her room to pick her up and she welcomes me with a great smile.”

 

Vincent is also the  happy dad of Flynn, 4 years old and Oceanna, 3 years old. “They were here on the day we opened Frenchies and have been a great part of the adventure!” What Vincent loves is Paddle Boarding around Sans Souci with both his kids sitting quietly at the front.

To celebrate all this love, Thomas & Vincent will be offering a beer to all dads for Father’s Day!

As per every celebration, Thomas has crafted one of his very special 4-course degustation menus.

La Boussole

La Boussole is the first release from our barrel ageing program.

Its a very limited edition, as we have released 600 bottles only. They will be available at Frenchies and in our usual bottle shops from Friday 26 July.

La Boussole (the Compass) was explorer Lapérouses first ship. All our Biere de Garde are named after Lapérouses epic explorations. Like a compass this beer will show you the way into our barrel aged beers.

La Boussole is the barrel aged version of our Astrolabe. Back in January, we sourced 3 French oak barrels from the Bird in Hand winery in Adelaide Hills.

As we took them back to the brewery we gave a good rinse to 2 of them to get most of the Shiraz flavour out. We kept one still wet of Shiraz, curious to see how will impact the beer and keen to impart some shiraz tones.

We then casted 400L of freshly fermented Astrolabe into 2 barrels, a clean one and a shiraz soaked one. Before filling the last barrel we clarified the Astrolabe in the stainless steel tank. This means that the last barrel would have bright beer with no yeast left. We then had 600L of beer in 3 barrels, each having its own character.

As we filled the barrels we inoculated them with fresh brettanomyces, pediococcus and lactobacillus. Those 3 strains would bring extra complexity, depth and acidity to the beer.

The beer sat in those barrels all summer, slowly maturing, extracting oak flavour, souring and forming new flavours through the work of the microorganism we pitched. In spring we were happy with the amount of oak flavour in each barrel. We started running blending trials to achieve the best flavour.

Finally a little after 3 month in barrels we blended, primed and bottled the lot. It took a good month to referment in the bottle at ambient temperature. But a few more month were needed to refine the aromas and flavours. Early June we tasted the first bottles during GABS. We were blown away how much it had evolved. We thought, if it has gone that far since bottling, let’s leave it one more month to see how far can still go!

 

Tasting Notes:
Frenchies La Boussole is a beer for storing, and just keeps improving over the years like a fine wine. This dark red beer displays wonderful aromas of caramel, apple, rhubarb, cherries and malt. On the palate you will find hints of apple and cherries, combined with woody notes, while the aftertaste hints at nuts and dried raisins. With a mildly acidic taste  this beer fits perfectly on the dining table to go with juicy beef rib eye, roasted duck breast, venison and blue cheese.
